I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Kale and Tomato Gnocchi

One day I may up my gnocchi game and try homemade, but for now I'll stick with store bought.


Ingredients:

4 slices bacon
1 lb gnocchi
1/2 tsp sugar
2 cups diced canned tomatoes
pinch red pepper flakes
1 tbsp balsamic vinegar
1 - 1  1/2 cups chopped kale and/or spinach
a few chopped basil leaves
3 garlic cloves minced



Begin by cooking the bacon in a skillet until crispy, remove from pan and drain off all the bacon fat except for about 1 tablespoon. To the same skillet add the diced tomatoes, sugar, red pepper flakes and balsamic vinegar. Deglaze the pan and cook on medium heat 5 minutes.

Chop the bacon and return it to the pan.

Boil the gnocchi as per package directions. Mine was 3 minutes so at the same time I also added the kale/spinach mix to the sauce and cooked it an additional 3 minutes.



Have the basil leaves chopped and the garlic minced so that when you rinse the cooked gnocchi you will toss them with the sauce, add the basil and garlic and serve warm.


This serves 2-3

I may just have to pick up another package of gnocchi!
