I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Streusel Sweet Potato and Banana Muffins

These muffins are super moist. But the big plus here is the vitamin A in sweet potato...it's level is practically off the charts compared to other sources.  A medium sweet potato has a daily value of 283% of vitamin A!
Great for better eye health!

Doggies need good vision too, so see the sweet potato chip recipe at the end of this post.


Ingredients for muffins:

1 medium sweet potato
4 ripe bananas
1/4 cup brown sugar
1/2 cup melted butter
1 tsp vanilla
2 eggs

1 cup whole wheat flour
1/2 cup white flour
2  1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice

Streusel:

1/2 cup sugar
2 tbsps flour
2 tbsps soft butter
1 tsp cinnamon

Wow, these look pretty sad!!



Bake the sweet potato at 350F for 45 minutes or microwave on high 8-10 minutes. Cool, then peel and mash. (Reserve the peels)

Beat mashed sweet potato with bananas.


Add the brown sugar, melted butter, vanilla and eggs.

Combine the flours (you can also just use 1  1/2 cups whole wheat flour with no white flour), baking powder, soda, salt, cinnamon and allspice. Add dry ingredients to the wet and mix just until combined.

Mix the streusel ingredients together in a small bowl.

Dollop a heaping tablespoon of batter into each lined muffin cup, sprinkle with streusel then fill with remaining batter. Top off with the rest of the streusel mix.


Bake at 350F for 25-30 minutes. Cake tester should come out clean.


Makes 16 medium sized muffins


Doggie Sweet Potato Chips... simply place the reserved sweet potato skins on a baking sheet and bake at 350F for 10 minutes. So when you first put the muffins in the oven, slide a sheet with the peels in too. Just remember to take them out before the muffins are done!


No need for any added anything...no oil, salt or flavouring of any kind. Karma loves these just the way they are!
