I'm not big on making lunches. I'd rather bake or make a meal, but lunches...I don't know. Just have a mental block about them.
But this little mug pizza was worth a try. Obviously it's not like "real" pizza but surprisingly pretty good!
4 tbsps flour
1/8 tsp baking powder
pinch baking soda
pinch salt
3 tbsps milk
1 tbsp olive oil
1 tbsp tomato sauce
1 tbsp shredded mozzeralla
pepperoni
italian herbs and parmesan
Mix the first 4 ingredients together in a 3/4-1 cup sized microwaveable mug. Add the milk and olive oil. Once combined top with sauce, cheese, torn pepperoni and a sprinkling of herbs and parmesan.
Microwave on high 1 minute and 10-20 seconds.
Makes 1 mug pizza
