I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Blackened Basa with Sriracha Tartar Sauce

No bland fish dish here.  This one will get you right in the taste buds!

4 basa fillets
olive oil
hot sauce (sriracha or tabasco)

Rub:
1  1/2 tbsps paprika
1/2 tsp cayenne
2 tsps onion powder
1/2 tsp lemon pepper
1/2 tsp thyme
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder

Pam

Sriracha Tartar Sauce:
1/3 cup mayonnaise
2 tsps lemon juice
1 tsp sweet relish
1/4 tsps onion powder
1/2 tsp sriracha

Cover your baking sheet with foil. It'll make cleanup a whole lot easier. Brush the foil with 1-2 tbsps olive oil. Place the fillets on the foil. Mix 2 tbsps olive oil with 1/2 tsp hot sauce and brush it on the fillets.
Mix the rub ingredients together and sprinkle evenly over fillets. Rub in using your fingers or the back of a spoon. I used all the rub on these 4 fillets, nothing leftover.
You can prepare up to this point and refrigerate until later.
I let the flavours sit for 6 hours.
When ready  heat the oven to 425 F and spray fillets lightly with Pam cooking spray. Bake 10 minutes or until the fish flakes easily with a fork.
Mix the tartar ingredients together
and serve.

Baked Walleye Fish Cakes

I'm not crazy about fish, but that's not because of the taste. It's because of the bones. Chopping your fish up to make cakes takes care of that problem....mostly.

Here's what you need:

1 lb walleye (any white fish will do)
1 egg
2 tbsps mayo
2 tsp lemon juice
2 green onions, finely chopped
2 tbsps green pepper, finely chopped
1 tbsp dijon mustard (I used one with Chardonnay in it)
1/2 tsp cumin
1/2 tsp lemon pepper
1/2 tsp celery seed
1/2 cup plus about 2 tbsps Italian bread crumbs
      (plus extra for dredging)

So here we go.  Chop the fish well, 1/4 inch or smaller pieces. (Yay...chop those little bones up!)

Beat the egg in a large bowl and add mayo, lemon juice, green onion, green pepper, dijon, cumin, lemon pepper and celery seed.
Mix in the fish and 1/2 cup of bread crumbs.  Add 1 or 2 more tbsps until you get a consistency that holds your mixture together and comes away from the bowl.
Form into patties about 3/4 inch thick.
Dredge each pattie in bread crumbs, place on parchment lined baking sheet and refrigerate to set well.
When ready to eat simply pop them into a 350 F oven for 8 minutes. Then flip, lightly spray with cooking oil and bake an additional 7 minutes.  Broil 1-2 minutes.
You could also pan fry in oil if that's your thing. A few minutes on each side.
In the interest of full disclosure, there were a couple of very small bones found, oh well : (   nothing's perfect.

Cedar Plank Salmon with Mixed Greens & Avocado Dressing

I'm not crazy about fish......but this was goooooood!

Soak a cedar plank in water for at least 1 hour.  Take it out of the water and put sliced lemons on it, top with salmon fillets.  I spread about 1/2 tsp of honey on each filet, then rub in the spice.  You can use whatever you like but this is what I used. Summer Kitchen Gone Fishing spice rub from HomeSense.

(If you don't want to BBQ you can also put your lemon slices on a piece of foil, top with fish and seasonings and wrap up. Bake at 400F for 20 mins then uncover and broil, keeping an eye on it, for 3-5 mins) 
If you are BBQ'ing you need to have the BBQ at 375-400F. Put the plank with the salmon in, close the lid and bake for 20-25 minutes.  Then be patient and let them sit 5 minutes before serving on a bed of rice.

For the salad take 1 ripe avocado, 2 Tbsp. lime juice, 3 Tbsp. water, 1 Tbsp. white wine vinegar, 1 Tbsp. cilantro, 1 small garlic clove, 1/4 tsp each salt and pepper. Combine in a food processor and refrigerate until ready to use. (recipe from Ontario turkey farmers booklet)
Toss together 3 cups greens, 3 cups broccoli slaw, 1 cup grape tomatoes halved and 1/2 cup corn kernels.
I'll be making this again!
I bought some Basa fillets last week...........maybe I'll try this recipe with them, will keep you posted.
