I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Breakfast Sausage Quesadilla

Breakfast for 2 !

3 breakfast sausages, sliced
2-3 tbsps chopped onion
1-2 tbsps celery and it's leaves
2 eggs
worcestershire sauce
salt, pepper and paprika to taste
1 tbsp butter
2  6-inch tortillas
1/2 cup shredded cheese

Brown the sliced sausage and onions in a frying pan adding the celery once the onions become translucent. Add a splash of worcestershire to de-glaze the pan then remove to a bowl.

In the same pan add butter, scrambled eggs beaten with another splash or two of worcestershire, salt, pepper and paprika.

Lay a tortilla in a clean frying pan on medium high heat and spoon the cooked scramble eggs on top. Add the meat and veggie mix, sprinkle the cheese over the meat

and top with the other tortilla.

Heat 2 minutes, then carefully flip over and cook another 1-2 minutes, until the cheese is melted.

Serve alongside some tomatoes or sliced fruit. 
Breakfast is served!

Pineapple BBQ Chicken Quesadilla

Here's another easy lunch or light supper.
Serves 2

4 tortillas
2 cooked chicken thighs
2 tbsps BBQ sauce
1 onion, thinly sliced, caramelized
1 tbsp olive oil
1 tbsp margarine
1 tsp sugar
1 tsp balsamic vinegar
1 large mushroom, finely chopped
2 spears grilled fresh pineapple, sliced
1 cup shredded jalapeno havarti

Grill fresh pineapple spears on the BBQ until browned and set aside.
Slice your onion thinly and fry in oil or margarine for about 5 minutes.  Then add 1 tsp sugar and 
1 tsp balsamic vinegar and continue cooking another 5-10 minutes until soft and golden. Use a frying pan that is large enough to spread the onion out.  If the pan is too small the onion will tend to be more boiled than fried and caramelized.

If you plan ahead you can have the pineapple, onion and chicken previously cooked.  It makes throwing this recipe together super easy.
Lay 2 tortillas out and top with sliced or chopped cooked BBQ chicken.  This is the chicken and sauce recipe I used. But you could use store-bought BBQ chicken and bottled BBQ sauce.

Over the chicken top with caramelized onion, chopped mushroom, sliced pineapple and BBQ sauce.
Pile on the shredded cheese and cover with tortilla.
Heat margarine in a frying pan and cook tortilla on both sides, heating until the cheese melts.

BBQ Chicken & Strawberry Quesadilla

Quesadillas are so versatile.  You can put just about anything you like between 2 tortillas.

This one's got:

6 tortillas
2 slices of cooked bacon, crumbled
1 diced red onion
some torn fresh basil leaves
1 cup cooked BBQ chicken, cubed
5 or 6 strawberries, sliced
a drizzle of balsamic vinegar
1 cup of shredded old cheddar cheese
olive oil

Lay out 3 tortillas and divide the bacon, onion, basil, chicken and strawberries on top of each.  Drizzle balsamic vinegar over all and add the cheese.

Top with a second tortilla.  Heat the olive oil in a frying pan and add you quesadilla.

Cook until golden, flip and fry until both sides are golden and the cheese has started to melt.
