I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Baked Egg and Bean Tortilla Cup

Looking for something different for breakfast? Or brunch?
This recipe serves 2 but can easily be doubled or more.

2  6-inch tortillas
1 cup baked beans
1 tbsp steak sauce
2 eggs
1 tbsp olive oil
2 tbsps chopped onion
1 tbsp chopped red pepper
2 tbsps shredded cheddar cheese
salt and pepper

Prepare two small baking dishes with cooking spray and press a tortilla into each to form a cup.
Add the steak sauce to the baked beans and fill the cups.
You could use canned baked beans.

Break an egg over each.
In a small frying pan heat olive oil and lightly fry the onion and red pepper and divide over each egg.
Add salt and pepper to taste and top with shredded cheese.
Pop in the oven at 400 F for 15 - 20 minutes.
If you want a runny egg, 15 minutes will do

Pork and Beans Stuffed Sweet Potatoes

This is a meal in itself!

2 or 3 medium sized sweet potatoes
1 tbsp freshly chopped parsley
2 tbsps sour cream
2 pinches garlic powder
1 pinch dry mustard
1/2 - 3/4 cup cooked cubed smoked pork shoulder
1 can baked beans (or definitely homemade if you have it!)
Sour cream to garnish (optional)

Wash the sweet potatoes and pierce a few times with a knife. Wrap each one in a dampened paper towel
and microwave individually about 2 minutes. Turn over for another 2-3 minutes. If yours are bigger than mine, give them alittle more time in the micro until they are cooked.

Cut in half and cool until you can handle them.  Scoop out the potato, mash it up in a bowl and add the parsley, sour cream, garlic powder and dry mustard.

Spoon this mixture back into the potato shells. Top with pork shoulder.
Place in a covered casserole dish and bake at 350 F for 20-30 minutes or until hot.
Heat the baked beans and pile them on top.
And here they are topped with sour cream.

Guinness Baked Beans


By adding 1 can of Guinness to this recipe (in the last 30 or so minutes of cooking) you'll add oomph and Irish spirit to the meal.

Old Fashioned Baked Beans




This is a great recipe to make when it starts getting cold out.

4 lbs white pea beans
4 sliced onions
2 tbsp salt
8 tsp cider vinegar
4 tbsp brown sugar
2 tsp dry mustard
1 cup molasses (or more)
1/2 cup ketchup
1/4 tsp pepper
1/4-1/2 lb sliced salt pork, lean pork, or bacon

And the secret ingredient (If you have it. But don't worry if you don't. You'll see about that further in the recipe)

Sort and rinse beans.  SOAK BEANS OVERNIGHT in fridge covered in cold water.  Check after a couple of hours, you may need to add some more water.  



Drain.  Add 20 cups cold water

Cover, heat to boiling, then simmer 30 minutes or until nearly tender.  (The beans should be tender at this point, they will not become any softer in the oven) Drain again.

Add all remaining ingredients in a large heavy casserole or pot, stirring to combine.  Add enough water to cover mixture.

Cover with lid and bake in oven at 250F for 7 hours.



Always keep an eye that they don't get dry.  Add warm water as needed to keep beans covered. 

At this point you can take out 1-2 cups of beans and mash, then stir back into the pot.  And I usually add more molasses than called for, but that's a matter of taste.



One hour before serving, remove cover to darken the beans.
With a large recipe like this you'll want to freeze some for later in the winter.
