Juicy chunks of pear and a bunch of good-for-you zucchini that no one will know is in there!
This recipe makes 2 - 8 X 4" loaves or 24 muffins
Ingredients:
2 cups peeled, diced firm pears
3 cups shredded zucchini, unpeeled and lightly squeezed out
1 cup sugar
1 cup brown sugar
4 eggs
3/4 cup vegetable oil
1/4 cup tahini paste (or 1 cup oil and no tahini)
1 tbsp vanilla
2 cups flour
1 cup whole wheat flour
1 tbsp cinnamon
1/2 tsp nutmeg
1 tsp allspice
2 tsps baking powder
1 tsp salt
Prepare the pans you choose to use, either oil and line the bottom of loaf pans or paper liners for muffins. Combine the zucchini, sugars, eggs, oil, tahini and vanilla in a large bowl. Mix the dry ingredients together. Then add the wet ingredients to dry mixing just until combined. Fold in the pears and pour the batter into pans. Bake at 325°F for 60-65 minutes for loaves, 22-25 minutes for muffins. A cake tester should come out clean. Cool 10 minutes.Follow hotandcoldrunningmom on Pinterest.
