I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Roasted Onion Potatoes

I made these potatoes ages ago and forgot to take pictures. Finally got around to making them again. I'm glad I did!


Ingredients:
2 lbs potatoes (about 5 large russet)
1/2 cup water
1/4 cup lemon juice
1/4 cup olive oil
4 tsps dry onion soup mix
1/2 tsp salt
4 garlic cloves, minced
4 tsps dried thyme
4 tsps rosemary

Scrub the potatoes clean then cut, unpeeled, into 1" cubes. In a bag, toss them with water, lemon juice, olive oil, onion soup mix and salt.


Line a deep 13 X 9" pan with parchment paper and spread the potatoes out in a single layer. Cover with foil and roast in a 400 F oven for 40 minutes.



Then remove from oven, sprinkle the garlic, thyme and rosemary and return to the oven uncovered for 30 minutes.


After 30 minutes give them a stir and broil 3-4 minutes until they're perfectly golden.


Makes 6 servings
