I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Sweet Potato Kebabs

These kebabs are so easy to make and when they hit the barbecue with that hint of allspice...WOW!


Ingredients:

1 medium sweet potato, cut in 1/2" slices
2 tbsps olive oil
1/4 tsp salt
pinch pepper
1/4 tsp cumin
1/4 tsp allspice
sprinkle paprika

When you slice the sweet potato, don't peel it! Just scrub it clean then thread each slice of sweet potato onto the skewer through the middle so that they lie flat. Twist a little to get them through and even though some skewers ended up a little close to the surface instead of being evenly through the slice they turned out fine. And they stay flat when you flip them. Even this slice top middle below where you can see a slight crack stayed nicely on the skewer. 


Mix the olive oil, salt, pepper, cumin and allspice together and brush on both sides of the potato slices. Then sprinkle tops with paprika.

Grill on medium heat about 7 or 8 minutes per side. Check to see if they are soft. You may need a little longer if your slices are thicker.


Brush with a little more olive oil and serve warm or at room temperature. Don't forget...eat the skin! It's full of nutrients!
